Can you run stapled sheets through this equipment?
Preferably not. The staples will create grooves in the fold rollers that eventually, down the line, will cause problems with the machine.

How loud is it?
There's no such thing as a quiet paper folder. I would put the P7500 on the same level as a copier, you wouldn't want to have a phone call next to it but it isn't more disruptive than any other piece of office equipment.
